Sundried tomatoes represent a less spread tradition than in the past, but is unique nontheless. The secret of the recipe is in the drying process of the tomatoes that once seedless and cut in half are placed on wicca baskets or wooden boards and are left to dry in the sun for a few days. Once seasoned with different herbs they are pressed in to earthenware or glass containers and get covered in olive oil.
