Swordfish “cu sarmurigghiu” Ingredients
500gr. of swordfish
10cl of olive oil
one lemon
parsley
salt, pepper, oregano
Make a sauce with the olive oil,
Lots of lemon juice, saòt and a pinch of pepper and oregano (sarmurigghiu).
Plunge the swordfish already cut in slices that have to be 2 cm.
high in the sauce and leave it in it for about a hour. Then place
the slice over a grill and make it cook for a few minutes turning
and oiling them with the sauce. Once they are cooked put them on a
serving plate and serve them with the sarmurigghiu which you will
have warmed for a few seconds adding some grinded parsley.
